Easy Pumpkin Muffins

I put up my fall decorations, and it got me thinking about my favorite fall recipes.  Anything with pumpkin is a definite must!!  I was glad to add this recipe to my list.  I love my other pumpkin muffin recipe, but it is a little more time consuming. This is pumpkin muffins at it's easiest, and oh so moist!  Many thanks to our sister Meagan for giving me this recipe.

1 16 oz can of pumpkin
1 spice cake mix
optional: 1 1/2 cups chocolate chips
(or whatever amt you prefer)

Add pumpkin and cake mix.  Mix with electric mixer until combined.  Add chocolate chips and stir.  Put in lined muffin pan.  Smooth tops as well as you can.  Bake 350 for 25 min.  Let cool a few minutes before eating.  Yeilds 12 muffins. 

I made these today without the chocolate chips with my kids for preschool.  I let them smell the cake mix, and the pumpkin.  Then we talked about the colors, and the texture of each ingredient.  The best part was eating them.  They were begging for more!
